Did you know that 1 oz of chocolate eaten daily for 2 weeks can lower cortisol? Good news for all you chocolate lovers!!
Dark chocolate is loaded with antioxidants so look for dark chocolate, 70% cocoa or more, that doesn't contain a lot of sugar, dairy or extra ingredients.
I stumbled across this recipe for Raw Honey Turtles on Naturenates.com and had to try it. My husband has given me Carmel Turtles every Mother's Day, Valentines Day and many birthdays for as long as I can remember. They are the perfect combination of Carmel, chocolate and nuts, not his favorite, but a treat I can't resist. I now have to beg him NOT to give them to me because I know I will eat them all.
Give this super tasty substitute a try. I don't think you'll miss a thing.
RAW HONEY TURTLES
Ingredients:
1/2 cup raw cashew butter (I made my own in my Vitamin blender)
1/4 cup honey (Nature Nate's Raw & Unfiltered Honey or your local honey)
1 1/2 cups chocolate chips, melted (I tried Lily's Chocolate Morsels)
1/2 cup raw pecan halves
pinch of salt, optional
Directions:
In a large bowl, stir together cashew butter and honey. (I added the honey to the Vitamin after grinding the cashews.) Add a pinch of sea salt, if desired.
Line a standard sized muffin tin with silicone or parchment and baking cups.
Spoon a small amount of melted chocolate into the bottom of each cup. Allow to cool slightly. (I put mine in the refrigerator for about 5 minutes)
Top with cashew butter caramel. Sprinkle with several pecans. Finish with another topping of melted chocolate. You can press 1-2 pecans in the top of each turtle to dress them up.
Refrigerate until you are ready to serve. DELICIOUS!!!!
